Egg Devil

Egg devil also is known as “Egg chop”, “Dimer chop” or “Dimer devil”. It is one of the most popular street food of Kolkata.  From Bengali households to street side stalls, egg devils have spread out like wildfire. In West Bengal, it is served in parties, various occasions and get together. Although you’ll find various versions of this recipe, we have gone for a simpler version that can be easily followed by anyone. This is also one of the favorites among Bengalis during “Durga Puja”. Egg lovers can try this simple and easy recipe in your kitchen and spend some good time with devilled egg plus your loved ones.

Ingredients

  • 8 Hard Boiled Eggs – 8
  • Boiled Potatoes – 3 big
  • Chopped Green Chillies – 1 Teaspoon.
  • Chopped Coriander Leaves – Half Cup.
  • Grated ginger – 1Teaspoon.
  • Spice powders
    • Red Chilli Powder -1 Teaspoon
    • Pinch of Turmeric Powder,
    • Coriander Powder – 1 Teaspoon,
    • Cumin Powder 1/2 Teaspoon.
  • Salt to taste.
  • Corn flour for blending – ½ Cup
  • 2 raw egg whites.
  • Bread Crumbs – 2 cups.
  • Oil for deep frying.

Method

Take the boiled potatoes, peel them. Let them cool down.

Mash the boiled potatoes with your hand or a masher then add all the mentioned spice powders.

Lastly add grated ginger, chopped coriander leaves, green chilies along with enough salt. Mix them well to make sure no lumps.

Take a chunk of the potato blend in your hand, even out it in your hand.Then place an egg in the center, wrap it with the potato blend and try to give egg like/oval shape. Prepare the rest of them. Dip the egg like shaped blend into the beaten a raw egg white very well. Then roll it out in the breadcrumbs.

Make the rest of them in the same way.

Heat 3-4 tablespoons of oil in a pan or kadhai. To make out if the oil is all set, drop a small crumb of the blend in oil. If it rises and bubbles, the oil is ready.

Gently suspend the preparation in the hot oil and deep fry them in the hot oil for 5 – 7 minutes till it is brown on both sides.

Your egg devil is ready… Serve hot.

If you can cut them with a knife then its fine otherwise grab a thread and cut them from the middle as shown in the image. You can also sprinkle some chaat masala or black salt before serving the egg devil. Enjoy them with tomato sauce or homemade chutney.
